This may not work for everyone, but I have just managed to add my Epson All-In-One network printer in XP using the Epson drivers and software. The printer now works fully with all the software (except for ink monitoring). Even the scanner works!
Here's how:
First install ALL drivers and software.
Open Control Panel and ADD PRINTER. The Wizard will open. NEXT
Select Local Printer attached to this computer NEXT
Select "Create a new Port" and select Standard TCP/IP Port - NEXT
Welcome to Add Standard TCP/IP Printer Port Wizard opens. NEXT
Add Port: Type in IP address - Printer name will automatically fill in. NEXT
Additional Port Information Required: Device Type: Custom. (I left settings as they were) NEXT, then FINISH
Install Printer Software screen should come up. Select your printer driver. NEXT
Use Existing Driver may come up - Keep NEXT
Name Your Printer - Filled in automatcally for me. NEXT
Printer Sharing: Do not share NEXT
Print Test Page NEXT, FINISH

You have managed to do something I've been struggling with for the past three weeks!
I have a Kodak all-in-one printer which works fine in Mac and works fine on my Windows laptop. It's in Parallels with Win XP Pro that I have the problem.

Could you clarify a couple of things for me?
1) What precisely did you do on the Mac side for enabling the network? In the Systems Preferences (Sharing) what are your settings for Internet? Built-in ethernet or something else? My Mac connects wirelessly to my router using Airport. Both the Mac side and Parallels connect to the internet with no problem. I have "Printer Sharing" ON in the system preferences.

2) Are there any special settings I should make on the VM for networking? When I open the Network connection says I have a connection via Parallels.

3) In your Parallels config screen, do you have both networking and parallel port included? Which IP address do you put in when you say "Add Port?"

I am desperately trying to get my printer to work! Everything else in Parallels (programs and internet connections) is perfectly fine.

Thank you so much in advance for any help that either you or anyone else out there (Parallels Team, perhaps?) could suggest would help.

In answer to your questions:
I didn't have to do anything at all on the Mac side. My printer already worked wirelessly through the print server, although first I had to assign a static IP address for it to work in Windows. I set this at 192.168.2.4. (I set up the config originally on my desktop PC which took ages - In Mac, it just worked!)

In System Preferences, I have Personal file Sharing, Windows Sharing and Printer Sharing selected

I have no special settings on the VM apart from the default connection via Parallels.

In the VM Config screen I only have networking enabled, I have not added any extra ports etc.

Make sure, though, that you add all the drivers for your all-in one in your VM (Win XP Pro) BEFORE you add the printer. Occasionally now if I try to print in Parallels, the printer is "greyed out". I just delete the printer and add it again.

I forgot to add that in System Preferences on my Mac I do not have anything selected for Internet sharing.

Where did you find the IP address for the printer?

I just selected an unassigned IP address within the "192.168.2. *" range as required

I just wanted to add that this worked perfectly to get my HP Laserjet 3055 working under Parallels 3.0 under Tiger. The default method using the parallel port did not work as every time I sent a document it would actually reset the printer. The printer works fine in OS X.

Using the above method of creating a port for my network printer's IP address AND having the correct driver installed worked like a charm.

It worked for me too. Vista SP1 and an HP c7180 All InOne network connected. I used the "host name" rather than fixing the IP address.

Works for me to- used similar methods to fix network printers on PCs in the past too.

Using:

OS X 10.5.6
Parallels 3.0
and Vista Home Edition with SP-1
