System Restore will not fix your Outlook.pst file. You'll need to run: :\Program Files\Common Files\System\Mapi\1033\NT\Scanpst.exe
You'll also need to know the location of your Outlook.pst usually under: C:\Documents and Settings\<user name>\Local Settings\Application Data\Microsoft\Outlook
Let this tool scan and fix your PST file. It could take a while depending upon the size so be paitent.
Full knowledge base notes for this is at: http://support.microsoft.com/kb/197316

thanks for the advice which i have done and it certainly took a while to do a number of fixes but not after parallel desktop is started i get this message.
"cannot start microsoft office outlook. unable to open the outlook window. the set of folders could not be opened the server is not available. contact your administrator if this condition persists"
so i cannot open outlook. not sure what to do.
greatly appreciate your advice.

You can create a new Outlook profile. Yours may be corrupt. Once complete you can import you're OLD PST into the new one if you really need it.

just clone your VM every weekend
keep the data in shared folders
if a VM misbehaves
delete it and fall back to the last clone
don't waste time trying to fix a VM
you must do standard Win XP maintenance / good house keeping
check and fix registery errors
defrag with utilities - freebies from MS
ante virus and firewall too
eg
PC Health
the Windows Live OneCare safety scanner
http://onecare.live.com/
which I found via the Windows Live toolbar
