You could use Carbon Copy Cloner to backup your Mac and run prlbackup in a simple post flight task in order to backup your VMs first. Just make sure to run it as the right user (i.e. `su username -c prlbackup --all`) in your post flight script.

(Disclaimer: I am the author of prlbackup and curious if it also works on the Mac mini version of Parallels :-)
