I have the same problem. I installed a new SSD in my Macbook Pro (running OS X 10.6.7), reinstalled a Bootcamp partition (Win7) and the latest Parallels 6 build. Now the bootcamp import option is greyed out.
I hope someone will have an answer...

Configuration : MBP 2011 (Sandy bridge), 15" model, 8 GB RAM, 240 GB vertex 3, Mac OS X 10.6.7, Windows 7 SP1 on 60 GB Bootcamp partition. Parallels version is the latest FR one. I had completely uninstalled a previous one after I had the "bootcamp can't start in safe mode nor can it be stopped" bug.

News ! I relaunched Parallels and it recognized the Bootcamp partition, and imported it as a VM automatically. I guess a reboot solved whatever it was. It now works fine it seems. Reinstalled Parallels tools, works in Crystal mode right now.
I'll have to activate Windows again, but that's another problem.
