Took me a while to figure this out. During a Guest OS install from multiple ISO images, when its time to switch disks, release your mouse from the Guest OS and right click on the CD icon at the bottom of the parallels window. Select connect image and select the iso file that represents the next disk the guest OS needs. Jump back into the Guest OS install and proceed.
