I've got an issue creating a new VM Windows 8 Release Preview on the last 7.0.15095 release of Parallels.

Even in the Application options unchecking the box 'Share Mac applications with Windows', the Mac applications remain visible in the Windows desktop.

I tried to restart the Windows machine multiple times, selecting and unselecting the option, but I can't get this working.
Does someone know what could happen?

Also finding the same issue. Tried uninstall/reinstall of Parallels Tools
as well with no change. Mac apps are sill populating Win 8.

Is it all Mac Applications or just ones in which you have icons on the desktop of the mac?

For me at least, it is everything in the Mac's Applications folder as I do
keep any applications on my desktop. BTW, they all appear in the
"cartoon screen", for lack of a better term, that Windows 8 boots up in.

Also, after working with Win8 for a bit, I may be snatching up as many
    Win7 licenses I can afford.

Should I be able to see my Windows 7 applications along side my Mac applications in Windows 8 Release Preview after installation?

Same issue here. I found what is probably a temporary fix, though.

    1. On the Start screen, hold down the Shift key and right-click every one of the Mac program icons. A check mark appears on each of the icons to show they're selected.

    2. Click the Unpin from Start icon at the bottom-left corner of the screen. All of the selected Mac apps are removed from the Start screen.

Note, however, that any new Mac programs you install may automatically appear on the Start screen. (Not sure -- untested.) Similarly, if you click the All Apps icon on the Start screen, it shows that your Mac programs are still accessible and their icons reappear. All we've done in steps 1-2 is unpin them so that they aren't visible on the "normal" (large icon) Start screen.

This is still the case in Build 7.0.15104.
