Just paid for an upgrade to Parallels for Mac pro edition as I wanted to allocate more than 8GB Ram and believed this was the way to do it. Now having upgraded, I can't seem to go past 8GB. Is there a way around this as I would not have paid for the upgrade if this was the case. Thanks

You will not get one... they silently downgraded Parallels to create a "premium" packaging for more money...
Hmm. I looked in to a 'one time only' offer from Parallels to upgrade to "premium" for £34.99, which will be the annual subscription 'ad infinitum', which is actually cheaper than the subscription for the 'standard' edition. I've gone for that, so hopefully I'm sorted! I can always cancel next year, if necessary!
