I'm trying to figure out for an hour meanwhile by searching the Internet for a recipe how to delete a VM under Parallels under MacOS (High Sierra).

Here and there I read I should right click on the name and delete it. Right click on Mac?
(I'm using the test version of Parallels 13 Pro)

Hello ChristophK2, please follow as suggested below:
    1. Launch Parallels Desktop.app, but do not start your virtual machine.
    2. Click on the Parallels icon on the Mac menu bar > select Control Center.
    3. Right-click on your virtual machine and select Remove and check if this works. To know more, please refer this article Thanks!

What do you mean by "Launch Parallels Desktop App"? - excuse me, I'm new to MacOS. I have the || bars in the top menu bar in the right, right beside the WiFi symbol.

When I click on that and choose "Controlcenter" I'm getting two VMs named Windows 10 resp. Windows 10 1 listed. I switched off the one in question.

When I right click on the right field (Windows 10 name and with the On/Off switch and Settings tooth wheel below) nothing happens.
I do a right click in the lower right corner of the touchpad.

(I'm using Version 13.1.1 (43120) time limited test version)

I must withdraw my previous posting. I found that right click (secondary click) was set to click with two fingers.
    Right click menu now appears.
