If you open parallels tools put your cursor over presentation mode the edit/menu wheel will come up there you can make changes

Do you have possibly have "Use all Displays in full screen" checked?
What VM-OS are you using with your games?
Have you downloaded Mojave directly from apple? https://itunes.apple.com/us/app/macos-mojave/id1398502828?mt=12 as long as you have iTunes this...
This sounds like it may be Mac's Gatekeeper:
Security & privacy>General> open lock> click on App Store and Identified developers.
I would check the firewall settings on my Mac. It may be that permissions are required to pass through the firewall.

See if you can make any changes in the vm under control panel>Display>change to screen resolution

Part of the issue...
You can change resolution with vm selected parallels > view> set resolution (in my screen shot you can what I have my vm set to and what I can...
but if you followed instruction for option 2 from this knowledge base article they would be separate from one another.
Parallels is allowing you access into your bootcamp partition. It sound like you may have bootcamp set up in window as the #2 monitor in portrait...
or you could look under the search function in the finder for a .pvm file/
Under User>your name>Documents>Parallels> What .pvm do you show?
I would check my trash if you haven't deleted it yet and use the "put back" function on your Mac. Hopefully that should help.
Yes you should be able to use software like Adobe Photoshop and Illustrator, I have with older versions.

You can also add it to the Keyboard menu in general which should add it to all vm's
