I've never had a problem with my MacBook (2 GHz, 2 GB RAM) and any version of Parallels available in the last 4-5 months.

Here's what works for me with 4560.
Run Parallels with WinXP stopped. Click on any one of the Configuation items in the Parallels window....
I installed 4560 when it was first available .. and have found no (WinXP Pro) updates since.
FWIW .. I have had no Win update problems with v. 2...

Are you certain it is a Plain vs. Expanding hdd? I believe Image Tool only supports Plain hdds.
