I just had a remote session after I raised a support ticket. He knew exactly what he was doing, got Parallels Desktop working with Big Sur 11.1...
I'm not keen on fixing Parallels' problems. Looks like we need an update ASAP.

FYI, I just restarted the iMac using an external cloned drive with Big Sur 11.0.1 and Parallels 16.1.1; everything worked fine
I tried to use RenatN's approach but I don't know Terminal and I can't work out how to change -1 to 0. Any tips?
Thanks, I tried both the Terminal command and downgraded to 16.0.1 and it still doesn't work. Windows 10 says "network cable unplugged"
