Ahh, found the checkbox to disable that in Preferences. Maybe make it disabled until you enable Coherence? I don't think it makes sense otherwise.
I don't use Coherence, yet I'm still getting my Windows applications in the Cmd+Tab list and in the Dock. Activating them brings up Parallels....
