How to schedule a shutdown & restart?

We need to have Parallels shut down at whatever time, wait for a couple of hours (whist the Mac runs a backup), and then restart Parallels.

What's the best way to achieve this please?

You should be able to schedule this from your mac, (opening and closing of Parallels program)https://discussions.apple.com/message/8885542#8885542
You can schedule your vm actions once the program is open by:
Starting Parallels
selecting VM from Parallels menu
go to Virtual Machine
select Configure
select option, then Startup and Shutdown
select the options you wish to the right.
