My parallels is showing that the network adapter is missing, and this is causing the internet, our network, and the printers to not work. Has anyone ran into this problem, and how would you fix this?

Very strange: I do not see any usual problem with networking. So, may be you need to contact Parallels or Microsoft Support

As a possible troubleshout before contacting support in your case I'd suggest the following steps (in the preffered order):

    1) Run Windows troubleshouter.

    2) hard step. Skip it if you have troubles with it:
right-clik "My Computer" and choose "Manage". Open "Services". Check that service "Network Connections" is running.

    3) execute cmd.exe as administrator (click start -> cmd.exe, right-click on cmd.exe-icon and choose "Run as administrator) and execute the followin two commands:

    netsh winsock reset
    netsh int ip reset reset.log

    then reboot Windows

    4) this step is unlikely will be helpful, but it is worth to try:

    5) If you have some VPN-Client/Antivirus installed, try to uninstall it temporarily
