mtn lion parallels 7 xp + windows 7 bootcamp

I have a mid 2012 macbook pro 258g vertex ssd 750g 750rpm momentus hd in the optical drive and 16g ram. I have been running xp fine for about a year but needed to upgrade to win 7, I found a way where I could open bootcamp win 7 in parallels. my problem is;
a) It opens in Win 7 but I can't get a full screen, just the side bar (I have never used win 7 before)
b) Cannot seem to find an option to choose between win 7 and xp
