After changing the Screen Settings to more Space, the resolution under windows went to 3360x2100. is this problem already known? i would be very happy to have a fix very soon!

This is how retina mode works for applications. If you don't want resolution doubling in Windows set VM > Configure > Hardware > Video > Resolution to Scaled.

Yes, but this must be wrong. When my settings are on normal mode (Best for retina) the res in windows is how you would expect.
By just doubling the resolution, my problem isnt fixed. i want to set my res for osx to "more space" but have to normal res in Windows (2880x1600).
    Isnt this possible?

OS X applications only have a choice to render to "point" resolution or double resolution. "Best for retina" is actually 1440x900 points, various "more space" modes provide higher point resolution. Since rMBP panel is exactly 2880x1800 pixels "more space" modes are scaled transparently by OS X.
You can set Windows in full screen to 2880x1800 while OS X is set to more space. But the result will be worse than you expect due to double scaling.

I can't change the resolution. It's fixed to 3360x2100. After changing the resolution, it automatically changes back.

Change VM > Configuration > Options > Full Screen > "Scale to fit screen" option to Keep ratio or Scaled.

Then you should be able to change resolution from within Windows when VM is in full screen.
If that doesn't work generate a problem report via Parallels Help menu and post report ID here.
