This is driving me insane. I've just installed a new VM Windows 10 under Parallels Desktop 15 - but I can't see ANY of the Mac Drives and I can't do a simple cut and paste between macOS and Windows 10. I've done these installations before with the same CDs and with previous installations cut and paste worked and Mac drives were visible. Now, I 100% stuck. I'll given someone $100 right NOW just to fix this without the enormous time sucking hassle.

As we see in other thread, you've resolved this issue with the Parallels Tools reinstallation.
Please let us know if you have any additional questions or let us know if the issue still persists.
