For what it's worth. I have the same problem with Outlook, but on my Windows PC (as well as when I run parallels). This may be an outlook issue, rather than parallels.

I get this if I have a Windows/parallels app in the foreground. If I bring a OSX app to the foreground, it sleeps just fine. Don't ask me why.

Boot up in safe mode -- press fn-f8 as soon as you turn the vm on. Once you boot up in safe mode, you should have access to those keys. Remove parallels tools. Reboot. Once you reboot, install the new version of tools.

You can also map "My Documents" directly to any folder, including a network folder. I simply mapped "My Documents" to \\.psf\documents which is mapped to my \users\charles\documents folder. That way, apps on both sides see the same set of docs.
