Parallels currently does not support virtualization of Mac OS X, mostly because the Mac OS X license does not allow for virtualization. Fortunately however the Mac OS X Server license has recently been changed to allow for virtualization, see the details in this blog entry. While there is a very good chance Parallels Server will support virtualization of OS X Server, don't count on Parallels Desktop supporting it.
