When I launch Parallels 5, it shows me a list of VMs that I commonly use. Is there a way for me to get the absolute path for a given VM? For example, a VM might be called "Windows7" and its absolute path could be /Volumes/SolidState/Parallels/Windows7.pvm. But how can I get Parallels to report that path?

I've tried hovering, looking through the config and checking menus. Hopefully I'm just missing something.

If it's not possible, where is the list stored (for Parallels 5) so that I can look there?

Right click a VM and select Show in Finder. This will open the folder containing the VM. Command-click the name of the folder to see the enclosing folders, or select Show Path Bar in the view menu to see the enclosing folders at the bottom of the window. To get the path as text, drag the VM to a Terminal.app window then you can copy the text from there.
