Opening Excel files launches VM! Can't get it to stop.

I am having a problem where parallels is being launched to open excel files that were created on the PC. I want to open all excel files in the mac version of Excel. When this has been happening, I go to the file, do a "get info" on it, select open with Mac Excel, and click apply to all. However, that does not appear to resolve the issue. When I get a new file from a PC, it seems to default to the VM. Very annoying...

Another question... The VM takes forever to start up and bogs my system down as it does boot up. I want it to automatically load to a snapshot instead of booting from scratch. How do I configure that? Right now it seems to default to loading from scratch.
 
Default to VM Excel: When VM is not running, you may want to go into Configuration Editor to check the settings of Shared Applications: Shared Windows Applications to Mac should be checked off.

"Snapshot Boot": the Suspend function in Parrallels Desktop for Mac is very similar to the native hibernate function in Windows: select Suspend from the Parallels Desktop for Mac Actions menu when you want to quit.
