Point Windows 8.1 to my CD DVD drive on my Mac.

Hello Troy1g,
Please make sure you have selected the Default CD/DVD option. To choose that option, please follow the steps as suggested at: http://kb.parallels.com/112209 and check how it goes.
The reason your Mac Desktop icons are shown on Windows Desktop is because the "Shared Profile: Share Mac user Folders with Windows option is turned ON" . If you uncheck or turn off the Shared Profile option, you won't see Mac icons on Windows Desktop.
To uncheck or turn off Shared Profile, please follow the steps below:
1) Start Parallels Desktop. Do not start your Virtual Machine or shut it down if it is running.
2) Go to your Virtual Machine's Configuration
http://kb.parallels.com/117287) -> Options -> Sharing and turn off (uncheck) Shared Profile feature.
