Possible? 2 versions of Win2k3 at the same time

To test Active Directory and domain configurations?

I work in a multiplatform enviornment, and was thinking that I could use Parallels to simulate a network on my Mac Pro, so that I could set up active directory domains and test them without having to haul out a couple of machines and hook up a private network.

Has anyone tried this?
 
Scenarios like this should work fine as long as neither OS X or the VMs are starved for RAM. There was a post here a few months ago from a student who had three VMs running simultaneously in order to simulate routing configurations.
