Safari not available as Mac default browser

So here's a new glitch I have encountered a couple times in the past months. I click on a link somewhere on my Mac (e.g. a link to online help) and I get an error saying it can't open a certain Parallels VM to open Firefox or whatever.

I go to System Settings > Desktop & Dock > Default web browser and Safari is not in the list. Instead I have a list of various browsers from my VMs, Firefox and Edge from one, Edge from another VM, Internet Explorer from yet another VM, all in total 8 browsers all from Parallels VMs, but no Safari.

Manually opening Safari can fix this sometimes. This is on Sonoma and Parallels 19.

What's the fix?
