Unable to access Mac shared folders, change Windows resolution (stuck to 1024x768) and...

I have Parallel Mac Pro edition and it just upgraded to version 12. After upgraded, it looks like there was some problems so I uninstalled Parallels and Parallel Toolbox. I reinstalled both but since then, my windows 10 is stuck to 1024 x 768 (grey out and disabled in every configuration, Best for Retina, Scaled and Best for external display), I have no longer access to the Mac Shared Folders, I have lost all my applications that were pinned to windows Task bar. I tried to repin some but there is nothing to do they never stay pinned ???
Any idea or help would be appreciated ??? Is there a way to go back to my older version that was running just great ?

Uninstalling Parallels Desktop or Parallels Toolbox then reinstalling will not fix this issue, please try reinstalling Parallels Tools then check and let us know.
