I'm experiencing the same problem.
Once IE was updated from 6 to 7, the icon no longer appears in the dock. The old IE 6 proxy application resides still in the VM related "Windows Application" directory. If I remove the proxy applications and repopulate the directory, pretty all other Windows applications are created fine except Internet Explorer. I can use the old IE 6 proxy application to launch IE 7 in the VM though.
