I need to change the memory allocation but it won't let me unless I shut down the VM, but i don't find any place to shut down the VM and keep Paralles running.

Please be specific about exactly where to find the off button for the VM and the configuration menu item.

Otherwise I find Parallels... unparalleled! (sorry)

Shutdown your Windows VM. Start>Shutdown. Then Parallels is left running.
