Windows 10 icon still says 8.1

I've seen this as well. The Dock icon still uses the Win7/8 VM icon rather than Win10. Same VM on Parallels 10 shows the Win10 icon. I'm assuming they'll fix this.

Hi ,
This has to done manually. Make sure to shutdown the virtual machine before making any changes.
Click Actions > General and change the VM name.

That fixes the name, but not the image, I still get the Windows 7 start icon instead of the Windows 10 one, how can I change that?

Try this, worked for me:
Stop the Virtual Machine
Rename the Virtual Machine (not sure if this is necessary)
Right-Click on the dock icon and choose Option, Remove from Dock
Start the Virtual Machine
