Make sure the VM is shut down, but Parallels is still running. Choose Virtual Machine (menu) -> Configure -> Hardware (tab) -> Video -> Enable 3D acceleration

Disabling 3D from the VM configuration seems to fix the problem. Of course, this isn't a solution.
