can't find info on how to install more than one VM

Bit poster
Using trial of Parallels on Mac. Installed Ubuntu, piece of cake.
Cannot figure out, or find instructions anywhere, on how to exit one VM so I can install another.
Anytime I open Parallels, it opens Ubuntu again.
Usually it is pretty easy to find something that is crucial to the piece of software, but I cannot find this anywhere.
