How do I change the configuration of a Guest OS?

Whenever I startup a guest OS it immediately starts running. If I try to change the configuration it says I can't do that while it is running. If I stop the OS, then Parallels Desktop quits.

I can never get to the Config page.

Start Parallels from the Applications folder in Finder. Hold down the Apple command key when you select the VM.
