Don't know what to buy exactly from Parallels...

At the moment I have the installation you can see in my signature.

1st target is to make the latest MS Excel run on my Macbook (or whatever version works best at the moment).
2nd target is to realize the connection to my iPhone and to be able to change Excel-Sheets whereever I am... also with my iPhone.

Do you know, what exactly I have to buy, which upgrades etc.?
Does Parallels offer the whole solution for me or do I also have to buy software directly at Microsoft?

To be able to run Excel, you need to purchase it from Microsoft Store:http://www.microsoftstore.com/store/msstore/list/parentCategoryID.37286600/categoryID.50726300
There are both Mac and Windows versions, it just depends on what you prefer. According to my experience, most of the users prefer Windows versions.

As for accessing your virtual machine from iPad and iPhone, you need to purchase Parallels Mobile from the App Store:

It will allow you full control of your Virtual Machine running on your Mac and you can work with any documents you like.
