Giving root user a name other than 'Parallels'

I noticed in Parallels Desktop 14 that when I selected the menu item to create a Mint 19 virtual machine, it automatically gave the root user the name "Parallels" without asking me for input. I need to give the root account a different name. Is there a way to do this as part of the install process? Or do I need to (a) create an additional root account and delete the "Parallels" account? Or (b) rename the account (if that's even possible)?
