The best way to completely remove everything from your system is to use the un-installer included with Parallels, and then find the folder where your Parallels .hdd file is located, delete it and the contents (.hdd file, .pvs file, perhaps a .mem and .sav file and 'Windows Applications' and 'Windows Disks' folders.
