The creative Zen is not supported on the Mac, there is an old un-released, un-supported driver from creative, which enables you to access your Zen from iTunes, but it does not work reliably.
I don't know about the SanDisk or the Rhapsody service.
My brother in law has done some research and it does seem that the iRiver should work on a Mac, however you will not be able to use iTunes to automatically manage your player.
The easiest is by far an iPod, if price is a concern, look at the refurbished, a colleague of mine has bought a couple and is very satisfied with his purchases.

Any Mp3 player that shows up as a "USB Mass storage device" under Windows should work natively under Mac. You _might_ be able to get youe Zen working in Parallels, but that would depend on if the USB support of Parallels is good enough to make it work. It has gotten much better recently, but some things still don't work. Take your Mp3 player to a mac store that has a Parallels demo and try it 
As for Rhapdsody, I seem to remember someone saying that they got it working in Parallels under Mac. (Meaning you would have to buy Parallels, and a version of Windows to run in it in addition to Parallels)
Personally, I just use Pandora. Their flash player seems to work on anything, even Linux
By the way "MAC" is a network card address. "Mac" or "Macintosh" is a computer. Sorry, its my little pet-peve thing.
