I couldnt find this in the forums, maybe someone finds it useful.
Open AppleScript
Enter the attached code, changing "Your Machine Name" to your VMs name. Should you prefer to start instead of resuming, you can also change "prlctl resume" to "prlctl start". (AppIsRunning code is from here.)
Save as an application
Go find it
If you want to change the icon read here
Drag it to your dock and launch like any other application
