Recommended # cores with MacBook Pro??

I have decided to finally covert from a Intel PC to a MacBook Pro. The only applications (at the moment) I expect to have to run with Windows are: (1) MS Access and (2) MS Visio. I believe all the other apps I can get Mac versions. I am not a gamer or audio/video composition user so seeking advice on the recommended number of cores I could order for my new MacBook. Any advice will be appreciated. Thanks,
