What memory and RAM settings best suit large complex Excel spreadsheets

The performance is not what I expected after I upgraded from a fusion drive to a 1TB EVO 850 PRO and 16GB RAM on 2012 i7-Mac Mini
I rein stalled everything that had been on the Fusion drive with a Time Machine backup to my new SSD.
I have the pro editions of all latest software, Windows 10 Pro, Office 365 Pro Plus, Parallels Pro 12 etc
