What's the official Parallels take for using a stable version at this point?

I'm just trying to get some work done and nothing was acceptable with the latest Insider Preview versions.
I tried the first two steps here and the Start Menu was still not working properly.

The last step promises a more stable Windows 11 22000 and so far so good. (But isn't it a step backward?)

BUT where do I go from here? I activate it? I don't download the updates for now?
I just don't feel 100% confident with the path forward.
