Why can't I specify graphics memory on an Intel mac?
The Parallels app automatically directs me to Use automatic graphics memory on a Mac with Apple M1 chip (parallels.com).
I'm on an Intel mac and I don't even have an option to set the graphics memory on this new VM (I do on my older ones).

The reason outlined on the article makes sense for an M1 mac since it has unified memory. My Intel mac doesn't, it has RAM and seperate Graphics RAM.
