Hi Lennart1. Yes, you can install more than 1 virtual machine and use it simultaneously using Parallels Desktop for Mac.

Please refer this article to create 2 separate virtual machines (After creating one virtual machine, repeat the steps to create the second virtual machine). Then you can start and work on both the virtual machines.
