Windows offline files on the Mac side?

Ok here's a different request. I'm getting frustrated by the complete lack of an offline file sync with a server in OS X. I use my MBP for everything and take it everywhere. I want to have my files on the server at work (for backup reasons), but always take them with me without thinking about it. This took me all of 3 seconds to set up in Windows with a simple right-click. Score one for Bill.

Apparently I have to have some utility to enable server sync, but something like Carbon Copy isn't acceptable because it doesn't allow me to selectively manage my folders. It's all or none, and I don't want my entire Users folder backed up...my sysadmin would have my head.

What I want is Windows Offline Files! So I go to thinking, how could I use offline files within Parallels to handle files on the Mac side? Basically it means I need to store my Mac files within the Windows environment...any suggestions? Or is there something that can truly replicate offline files in OS X?

You could enable Windows sharing (Samba) on your entire user directory, but then you would open up your entire user directory to the vulnerabilities of Windows OS connected to the internet (which I admit I know very little about). However, if you did this, you would be able to manage backup of specific files in your shared home directory from within Windows.

Alternatively, you could enable your home directory as a Parallels shared folder. This would achieve the same result, however, the last time I tried shared directories (which was a few beta versions ago) they were awfuly slow, though I heard they have been improved somewhat.
